CUT TO ORDER
All our items are hand cut daily according to customer specifications. For local customers, we offer the freshest cuts of perfectly-aged meats, cut to order, and delivered daily. For our yacht and export customers, we offer special trimming, vacuum packaging, labeling and flash freezing of any product.
NO ONE DOES WAGYU LIKE WE DO
To supply our much prized Bush Brothers Australian Wagyu Beef, we choose only farms and ranches which follow our strict requirements. These include:
A minimum 360-day grain diet after being pasture-raised on mother's milk
Alignment with independently assessed Australian and Japanese marbling scores
100% free of antibiotics, steroids, growth accelerants and added hormones
World-class sanitation, production, and packaging allowing for 120+ day chilled shelf life
A consistent marbling and eating experience for your end-customer
Custom Dry-Aging
As standard practice, we offer dry-aged USDA Prime beef striploins, shortloins and ribs. We cut these into numerous cuts for customers who desire the earthy, nutty, "funky" old-world flavors that this process brings out. We also offer custom dry-aging for customers who want something totally unique. We have successfully aged pork, lamb, game meats, and odd cuts such as shortribs, skirt steaks and tomahawks.
ARTISAN GROUND BEEF
For nearly a century, Bush Brothers has created high-quality ground beef blends for our discerning customers. We offer a range of our own hand-crafted blends, as well as our guidance to assist you in creating your own proprietary blend.
Since Bush Brothers is one of the last independent meat companies in our region, and because of our exacting food safety standards, we are able to grind fresh, high-quality beef on a daily basis.
